How many of you outdoor cook with a Traeger? If not what is your BBQ rig of choice?

It was nice and crispy
So I deliver to a lot of the Chinese stores in the Bay Area. So I just buy them all prepped up by the store and this was the 2nd one I tried.
The prep work of getting the skin dry in the fridge or just hanging with a fan on it ( every store in the bay hangs em outside of refrigeration )

I poke 1,000 tiny holes in the skin but not deep into the meat. Next time I do it it’s gunna be 225 for 1:30 then crank it to 300 and go till 160 degrees

Great meatloaf recipe with Jack Daniels whisky in the meat and in the sauce.
Meatloaf is stuffed with pepper jack and chipotle jack cheese.

Currently running an old school Bradley and a gas grill. This will be the last season for the Bradley as it is showing its age and the pucks are getting too expensive. It’s been great for smoking fish but I have to finish pork butts and brisket in the oven since it does not get hot enough up here. Since today was nice it was time to rotate some salmon in preparation for this season.

I try to put a tray of water under chicken, something akin to a cookie sheet, the water keeps the fat from sticking to the bottom grease tray

I lost the battle of trying to keep my grease tray clean some time ago.
I just scrape now before if I need high temps ( hello grease fire )

My Weber Genesis is 6 years old, it shows some signs of aluminum corrosion on the pit and steel corrosion under the metal frame powder coat.
Still works great for grilling…
Yesterday we put on our first brisket at low temp and added some smoke with the amazen smoke tube. Yum 😋

I'm at a turning point with my smoking and grilling.
I've been cooking outside at least 5 nights a week for over 26 years for my wife and 3 sons.
Every Saturday night was a big bbq for the 5 of us, and sometimes up to 8-10 if their friends or girlfriends showed up.
I never minded, I love smoking and grilling big meaty meals for everyone.
Anyway, my 3 sons finally graduated college, got real jobs, bought a house together, and all moved out the same day in January.

So I'm only cooking for 2 now...It's not as much fun...
Our meals are much smaller now, but we are adjusting and still trying to make mouthwatering foods for 2.

Tonight we smoked, grilled, and then shared a 16 oz dry aged ribeye and dungeness crab cakes.
Quality over quantity now...

I get it, they grow up fast and we have to adjust, not easy but as a parents we did our job and off they go not really needing us. Tough, but what we wanted as a goal. Looks great, hope you two enjoyed it!

You're absolutely right. My wife and I have been enjoying our meals immensely, but I still miss standing around all day, drinking beer and nursing a 16 lb brisket.

I'll save that for the holidays now.

One great thing now... I do LOVE my much smaller grocery bill. 🍻
