Overheating issues

My TJ has been overheating lately. It will run at operating temperature (210 degrees) for a while then shoot up (approaching 260) all of a sudden. Most of the time (not every time) it will shoot back down in temp just as quickly as it shot up after a couple of minutes. This seemed like it was a thermostat issue so I went ahead and swapped that out. It continued to overheat so I went ahead and changed the fan clutch which also failed to solve the overheating issue. The only other cause I could think of is a clogged radiator but it was replaced by the previous owner about 2 1/2 years ago (5000 miles ago). Does anyone have any suggestions or advice?

Did you drill a hole at 12.00 on the thermostat?

No I did not drill a hole on the thermostat. I've heard of people of doing this but I would imagine the stock cooling system is meant to work without this work around so I'd rather figure what's wrong since I'm assuming the thermostat I removed wasn't drilled.

Not a work around,it’s factory,Go buy a MOPAR thermostat,it will have the hole,sounds just like what you have going on,fluctuating temps.
