Ok, what are you cooking?

A small, lil breakfast heart attack platter treat / AKA / “The Big Daddy”
4 scrambled eggs, 4 slices of bacon, 4 sausage links, home fries, 2 pieces of french toast & 2 pancakes. Washed down with a few peach liquor & champagne bellini’s.
Nothing missing except a defibrillator

Spicy Cornbread Calzone

I wanted a calzone on Friday but I ran out of flour, haven't been able to find my go to (King Arthur bread flour) or any bread flour for that matter for over a month now. Substituted a box of Jiffy Corn Muffin mix & ended up with a cornbread calzone, was pretty damn tasty

Add some yeast & Dizzy Pig Spicy Pineapple Head rub to the corn muffin mix, warm water, knead & let rise as usual:

about 3 or so hours later it had doubled in size

meanwhile caramelize some onions with more of the rub

stretch it out & into a pan with olive oil

baked it at 400 for about 15 minutes

the yeast gave it just enough lift to change the usual cornbread texture, was delicious
 
I recently stayed at home to study Chinese food,they need a lot of spices that I do n’t know,it took me a long time to know and be familiar with these spices.
 
So that camp chef can sear something up pretty good? I don't really do steaks much anymore and get by just fine w/ my pellet smoker & propane grill, but when I do want a steak I like a nice crust. It'd be good if I could do it outside and not smoke up the house.

I cut a piece of 1/8" steel plate and welded two pieces of angle iron across the bottom to keep it from warping. I throw it on the grill for a few minutes right over the coals and let it get screaming hot before hitting it with some oil and tossing the steaks on. It sears exceptionally well. Leaving the steaks on indirect heat on the grill next to the plate while its warming up results in perfectly seared medium rare steaks. I actually built it for my dad when I was showing him how to do seasoned and seared prime rib. Then I got jealous and made another for myself.
