What should I do to make it more agile and fun for daily driver?

Look good or bad is going to be completely up to your aesthetics, everyone on here has a different idea of how they want their jeep to look, and the only person that matters in the end is do you like it. As far as going back to "stock", stock wheels and tires for a Tj ranges from about 27-30.5in, so a 31 or like a 265/75 (31.5-32) is still going to be larger than stock, but smaller than your 33s.

As to my opinion "Would it look or drive bad with stock tire size", with the fender flares you have, 3.5 in of lift, and what look like 10in wheels, 31s will look a little awkward, but the jeep will drive better (on road of course), that's just math. acceleration will be better, braking distance will be shorter, and may even see a small bump in mpg.

if I was in your shoes, I would keep on eye out for some take offs. someone near you is undoubtedly upgrading their jeep and is selling off their old wheels and tires. grab those for cheap, put your 33s in the garage and see how you like it. If you do great buy wheels and tires you like with the money from selling the 33s. if you don't, swap them back out and looking to regearing.
I personally like this wheel from 2018 and it's 18 inch so I am not sure if it will work and also if it would help drive better. Any thoughts.

With wheel adapters, they will work, but may not see an appreciable weight difference (18s be heavy). Unfortunately, you have hit the end of my knowledge base, I'm really good in tj,lj,yj,xj,mj,zj,wj,fsj, and kj ish, I'm pretty ok from 41-06 in general, but I fall off hard after 06. ( I was really mad at jeep for a few years, but they seem to be turning a corner)

Long but but short, I don't have jk/jl/jt specs living in my head yet, can't help on the dirty details there

Every TJ is different, for everyone one who runs 33,s with no problems another struggles.
Just because a vehicle has low mileage doesn't mean its better or stronger than one with more mileage.

Put on 31,s with 16,s (nobody wants the 16,s it seems) put back 4/14 original flares and dump your lift! its a Rubicon so tire carrier and bumper with winch will look fine or if you dont like it put on a cheap free to low cost original front bumper and buy some OEM fogs and still get a chuck of change from your front bumper & winch sale.
Did you air up your tires to max? It lessens the road footprint of those "Sasquatch,s" and they travel easier (will wear in the centre if you keep them above max)
Falken tires are good tires and cheap, mine are made in Japan so you don't need to buy Duratecs if you get some cheap 16,s
Footnote as I open a can of PBR :)
Some people like the total TJ Stock look (Me) and there is nothing wrong with that, you have bought a painted canvas and its easy and cheaper to go back to a blank canvas than paint it up more :)

I don't want to debate here and respect what you say but a low mileage vehicle has better resale and not always but would have lesser wear and tear. Someone could bang up a a brand new vehicle within few months it all depends on how it was taken care and I understand that.

Fair N Uff :) I bought a Grannies shopping cart once and it changed my mind on low mileage one owners when the big ends started knocking soon after I bought it, plenty plenty stop start stop start care was taken by Grannie. :)

I think I understand @pixologics issue between his new jeep and old jeep and it comes down to the transmission. I had an 2004 Rubicon with the 5 spd on 33's prior to owning my LJ Rubicon 6 spd on 33's. My 04 was a lot more fun to drive, had more pep and was all around a blast to drive. I could pass people on the highway whenever I wanted too. My LJ Rubi is like driving around in an old pickup truck. Just doesn't have the same feel and definitely need to plan out passing someone on the highway a little more. I think a lot of that comes down to the transmission difference. About the only fix I can see would be to re-gear the axles.

Spot on this is my issue. I don't know why they made such gear ratio for six speed rubicon.
In my driving experience so far in six speed the 4th and 5th gear are the only gears where the sweet spot lies. Rest it's like a race to reach to get to 4th gear to get some pep.
And I am at 4th gear at the speed of 30mph at 2000rpm.
Overall my shift pattern is
1st gear 0-5mph
2 gear 5-15mph
3 gear 15-30mph
4 gear 30-45mph
5 gear 45-60mph
6 gear 60+ and downshift if you want to be safe and overtake.

‘05 TJ-U, and I rarely use 4th & 5th on surface streets. Sometimes not even 3rd if I’m on a bit of a downslope.
I’ll go from 3rd to 6th or 4th to 6th. Unless I’m wanting to gain speed on the freeway, then I’ll row through all gears.
On surface streets I do wrap it up around 3k rpm’s, give or take. Around here, surface streets are at the most 40 mph.

After 4.56s all my gears are useful. I’m usually in 5th on 40-45 streets and 70 is right about 2800 rpm. First does wind out pretty quickly but starting in 2nd doesn’t feel great so I won’t do it. Not like the NV4500 in my K10.
It was pretty turdy with the 3.73 and 32ish+ tires. Much better now.

Interesting all the metrics that I shared above are with RPM not exceeding 2400.
In 2 and 3 gear I found that on plain street there is no gain in speed beyond 3000 rpm. It's just engine revving more but that's it. I believe my clutch are fine but still this what I experience.
 
Post re-gear it pulls better over 3k. I don’t always rev it that high but if I need to get hustling it does fine.
 
Not sure what part of California you're in, but I've got stock springs if you need/want them. I'm currently looking for a new rear bumper, so I'll have the stock one to get rid of as well here soon.
 
Stop using 6th gear or re-gear it to 4.56
Regear it , install JKS sway bar links and a thumb throttle for nasty traffic.

I'm not too far from your location but I'm not looking to mess with suspension. Mostly want to get to stock wheel specs to start with and yes I might take off this heavy rear ARB tire carrier and bumper
