I saw this JL on the way home tonight, sorry fro the poor photo. But it 3 rows of seats and the last row was facing out the back.

I've seen JKUs with the same third row addition. I cannot remember the name of the company, but IIRC the 3rd row can be faced front or rear facing.
 
Teraflex has a 3rd row seat kit that uses a Jk 2-door fold and tumble rear seat for the 3rd row to a JKU. Not sure on the insurance ramifications
 
Reminds me of the Subaru Baja my dad used to own when I was younger. It had seats in the bed facing the rear. Didnt have any seatbelts though, just handles you had to grab onto.
