so by cutting a little off for the shocks to clear i don't have to worry about the springs slipping off?

You're not cutting enough off for it to be an issue.

If someone was fancy, they probably could cut a nice U out of it, then weld a U shaped piece of metal there to make it look custom.

Well I've got one side done. I used a hole saw and drill. Drimmal tool and a sander. Took me longer to get the shocks off and on than it did the hole. But here it is.
