Absolutely no issues on the highway, with or without uppers.
There are some times where they absolutely suck for daily use. Like when it's raining and you need to unzip a soft upper window.. to go through a drive thru.

LOL yes the unzipping window is the worst part of it all. I considered the hard slider window upper but I like being able to toss the soft upper in back for storage and not worry about glass
Sold my full doors shortly after finding a decent set of half doors. I do usually have the uppers on. When I get to a trail, I'll remove the drivers side upper and put it in the back. Usually leave the passenger side on, but unzipped.
The uppers are a pain to store.
My TJ is a DP (perverts.. Dual Purpose-daily driver and Offroad fun) and I have yet to commit to the rear seat delete even though I can't remember the last time someone has buckled in back there.
The Tuffy Security Deck has been on my radar primarily because of the secure space to store the soft uppers.
I have yet to do a winter with half doors.
I pulled my rear seat out in favor of the Tuffy security box. I have yet to miss the back seat.
I have the Tuffy Security Enclosure behind the rear seat. It's all I need for daily driving duty. But with the back seat tumbled forward there's precious little space for camping gear. The upside is it has forced me to be really diligent with packing. Two HF Bauer boxes, a cooler and the canvas carry bag for the folding fire pit.. refined over years of use. The new tailgate table is easily removed. The two challenges I haven't resolved are getting all this gear up and over the Tuffy enclosure and how to store the soft uppers. No place to put the uppers if I am packed for camping. That's out of the questions. The Tuffy Security box would solve all of this. Just can't pull the $700 trigger and commit to taking the seat out.
Lose the back seat and just go with a Hooke Road rack. It's a great workbench too when out on the trail and as soon as I can find someone to bend me up an aluminum pan I'm going to put a 3" drawer under it for tools and recovery gear.

I found mine on FB marketplace for $100. It needed fresh paint but otherwise was compete. I see them pop up occasionally. Here is my set-up.
I got a custom cage done a few years ago. Was originally going to try and keep it as a 'family cage' and keep the rear seat. After talking to the fabricator, he explained that the harness bar would make the back seat pretty unsafe. So like yourself, thought about how I haven't had a passenger back there in many years even though my wife liked the idea of keeping it as an option. Decided it wasn't going to work.
In the last 3+ years, I've had one passenger. And that was to drop off my son 10 min away. At that point, I'd had the PRP seats and harnesses for 2 years and hadn't taken the plastic off of the passenger seat harness yet.
For the doors, we don't have 'real' winter here in CA. We would refer to it as freezing if it was in the low 50's.
Full doors are much nicer for DD though. It's nice to be able to roll down the window and not have to deal with zippers.
With this setup, is there anything stopping gear from sliding forward? I bought the imitation Tuffy security box (also Hooke Road) for my LJ and really don't need security. Just want a place to be able to put things and not worry about having my junk kill me if the Jeep rolls on the freeway or trail. This would be much simpler.

Yeah, looks like the paint is in good shape. I'm looking out for a khaki hood in good shape for my DD TJ. Paint is pretty damaged, but mostly just on the hood.
I wheeled with a guy that made a hard bikini top out of a damaged JKU top. It actually came out pretty good, I was impressed.
I ran no doors and a bikini top all summer when I first got the jeep in highschool. It got the wow I have a jeep and I’m in highschool vibes out. In that time for winter I also ran hard uppers with the sliding glass but they had to be bolted into the lowers. They were hell in a jeep with no ac. Never opened far enough to let any air in and barely large enough for a fast food bag. Being bolted you couldn’t just pop them out on a warm day. Wouldn’t touch them again. Full doors do the hard top winter job.
Back to half doors. Half doors with a soft top is my absolute favorite way to have to Jeep set up. Half doors protect and stop just enough wind to make things fun for longer drives (no doors and my legs are tingling from the wind pretty quick) while still being more open than any other door so you don’t loose much openness from no door to half doors. I love storing the uppers and soft top windows in the back trunk space so even if I’m out and get caught in the rain I can throw the uppers and windows in and be totally fine.

It was much nicer than mine. Why I sold it. I can't have nice things. I'm pretty sure my previous owner had some girls (or boys...I don't judge) dancing on the hood. Probably on the beach judging by the amount of sand I pulled out.
I did keep the full doors off that Jeep.

If you can find some the half doors they are a winner. I have Full, tube, and half doors and like the half doors the best and they look great. If you find used ones pay close attention to the plastic interior door panel. They are even harder to find if they are missing but you can paint them if they are faded.
Summit actually makes them now. Not cheap but honestly prob the same price as what people are trying to sell used ones for.

Ii just unpacked from a camping trip. Lifting the stacking boxes and cooler over the security enclosure is a PITA. Easier at the end of the trip than at the beginning but it's still a pain.
I am in the process of installing L-Track along the tub rail to better secure gear. Shock cord doesn't do it and there's no good spot to hook a ratchet strap.
