How hot did you smoke it? That’s a fast cook for a full brisket.
About 300...Not really a low and slow cook. It turned out great though. It was also only a flat, not a whole brisket (about 9 lbs after trimming)

This one took 11.5 hours! Rested it for about 7 hours. Turned out pretty good!

Ah, it looked bigger than that.
It was the first brisket I've ever done...so I didn't want to ruin a 20lb piece of meat!
Looks great! I am more and more convinced a long rest is crucial. How did you rest for 7 hours? I have used a cooler and it won't really last 7 hours and stay warm enough. I have tried the oven and it worked well but the lowest my oven can be set is 170, I would prefer 150.
I just picked up a char broil gas grill. I can cook burgers and steak on the pellet smoker with the sear grates but it's not the same.
I got the Performance model it won't take up much space. I got it from Lowes.
I am thinking about trying the Sear Daddy https://smokedaddyinc.com/product/the-universal-sear-daddy-pellet-grill-searing-station/ and see if that would let me retire my gas grill. Any other pellet heads on here try one?
