Just replaced the pinion seal and refilled, but I feel like not enough went in. Using here, a Haynes, and a few other spots I know the 44 should hold 2qts oil, however using the often wrong measurements on the jug it started coming out the weep hole at about 1.5qts. My pinion is canted slightly up to compensate for the lift(I'm not a human protractor but maybe 5degrees), which I'm thinking didn't help.
Any way to get that last .5 qt in or do you guys think I'll be good?

As a somewhat bench mark the Dana 30 took about the right amount

It's not a big deal but you can easily overfill a diff. I might if I had a Dana 44 running at an odd angle. Just pump the fluid in quick and plug the hole. It's pretty easy to do if you want to.

Raising the pinion will lower that fill hole. Unless you remove the diff cover you will likely leave some old fluid inside when you submit out. As long as it it filled to the fill hole you'll be fine.
