Not today.... but tomorrow I'll be smoking (reverse sear method) an 12lb Prime Rib Roast.

Today I'm going to dry brine it today with a modified salt and pepper rub (mushroom powder, garlic powder, ground rosemary and hazelnut coffee).

I'll hit it again with a non salted version of the rub with much more coarse versions of the same ingredients and smoke it at 225 until it hits 110 and move to my grill and sear the exterior at 500° until it hits 120 in the center. Tent in foil for 30 min and cut/serve.
 
Didn’t grab pictures but smoked three Jimmy dean fatties last night. Two hot and one not.

Rubbed each with a different rub. The hot ones got dirty bird hot and holy voodoo. The non hot one got honey hog.

We’ll fry slices for breakfast.

Have a brisket going on before bed tonight.
 
9lb brisket cut in half. Half got a Texas style rub, other half got an all south rub then vacuum sealed.

Sous vide for 36 hours at 155 then pull out and let it come to room temp. Take it out of the bags, pat dry, season a little, then smoke for 2 hours @220.

pizzapallooza continues, wrapped up the very long Christmas week/weekend last night with a visit from my son & his fiance, at his request a couple Sicilian pies to chomp on while watching the Eagles game

I think I've OD'd on pizza, gotta steer the ship in a different direction for a while
 
Made 1980’s USDA school cafeteria pizza last night. Pourable crust (yeast, sugar, salt, powdered milk, oil and water), meat sauce (ground beef, tomato paste, dried onion, garlic powder, pepper, basil, oregano, marjoram and thyme) and mozzarella cheese.
Told my wife she needed to serve it on a tray with a fruit cup and pint container of milk whilst wearing an institutional lunch lady uniform and apron; don’t forget the hair net.
I won’t repeat her answer. It was rather rude.
