The only thing which will cause your too cool scenario is a bad thermostat. It’s stuck open.
Is it the same thermostat you were running when you were overheating?
Pull the console, pull the trans cover plate. A few more small details to it, but pretty simple. And once you do it those two bolts are right there.
That said - probably a good bit quicker to follow Mac’s plan to lower the tranny a bit. Unless the bolts are corroded, once they break you can...

No, but I have not heard good things. I ran an intercooled Kenne Bell SC for years, and it worked very, very well. That one is no longer available though.
I assume you are running a 4.0, but you’ve not stated so. If so, what have you done, or planning to do, to the rotating assembly to deal with the increased pressure? What are you planning for exhaust? How did you handle tuning for the current SC?
Well, all cleaned up (which is saying something with that nasty Alabama clay) and back together.
Now I just have to fix the hydro line….and the stereo. 🙃
