Fluctuating temperature gauge

I have a 2005 LJ Rubicon. Recently replaced radiator(split at the top) and thermostat. 195 thermostat and the radiator is from advance auto parts. My temp gauge will flunctuate from a tick over 210 to below 210. When I lifted the hood after driving, underneath the hood was so hot I couldn’t touch it. What’s causing the gauge to flunctuate? Also, is the hood heat common? Not my first Jeep, 2 TJ Rubicon’s, 1 JK Rubicon, but never had a problem with running over 210.

That's normal for the temp gauge to fluctuate a bit. It should be between 210 to 220 (slightly over the middle mark), and it will go back-and-forth depending on the outside temp, whether you're moving or sitting in traffic, etc.

This is 100% normal for TJs. The gauges on these things are pretty notorious anyways for not being very accurate.
