How tight do I need to torque the brake line banjo bolts?

Pull the old fluid out of the reservoir so you don't have to pump so much dirty fluid through the system.

Something like a turkey baster works well for sucking the old fluid out of reservoirs like that.

For anyone wondering - line wrenches (recommendation by Blaine) made quick work of the tube nut.

I had used Line wrenches for years in the USNavy on hydraulic and air fittings instead of an open end wrench or crescent wrench. They get full contact on 4 sides of the fitting.
For those that wonder what the Line wrenches look like....
