Im installing a 2 1/2” lift on my 04 Rubicon. Question: Will 33” tires fit with out rubbing? I’m using my stock Rubicon 16” wheels. Im not sure what the wheel width is? I’ve been told not to go over 3” wider on the tires than the rims. Any feedback is appreciated

I can tell you I have 33x10.5x15 on a 4.25" back space that work well with my 2.5" lift. wider tire /different offset and your results could vary.
I'd add a 1.25" body lift to that for 33s, IF you go off road at all. You can run 33x10'50" tires with stock wheels or 12.5" wide tires if you use wheel spacers with the stock Moab wheels.
I agree with the body lift. Mine in my profile pic, is 2" spring with 1.25" body and 33x12.5x15 on 15x8 wheels with 3.5" backspacing.
My suggestion is to use the search function for Coda Man's budget build. I have a '05 TJR and it's what I followed.
Here's the thread @DavidBT mentioned above and it's more or less the same approach I took. I have a 2" lift that gave me just over 2.5", plus a 1" body lift. I'm running 33x10.5x15 on 15" rims with 3.75" backspacing and it's worked out very well for me.

Setting the bumpstops correctly will determine whether tires will rub with minimal lifts.

on my 04 Rubicon on stock Moab wheels. Minimal rubbing happens only when wheel is cranked ( while stopped or moving). Im considering wheel spacers ( hub centric) and wondering what thickness I should choose… 3/4”,1” or other width? Supreme Suspension products are my preferred choice. Thanks for any advice.
If the rubbing bothers you, adding a washer or two to the steering stops is easier and less expensive.
You should aim for 4" of backspacing. I believe the Moab 16" stock wheels are 5", so you can use a 1" spacer from somewhere like Titan, or you can do as @TheBoogieman mentioned above and add some washers to the steering stops (which increases your turn radius).
