I have a 2000 Wrangler 4.0 and it usually ran 30psi of oil pressure at idle and around 50psi going down the hwy. then after changing the oil about 3k miles ago. I noticed today when I first started going down the road oil pressure was climbing to 80psi. Then I would get off the gas it would back off. Now since it’s warm it’s running 60psi on the hwy and 45psk idling. Oil was changed with full synthetic + 1 Quart of Lucas oil stabilizer. Is this normal? Never seen it climb to 80 before today.

Are you basing these measurements off the factory oil pressure gauge on the dash or something else?
 
That factory gauge is notoriously inaccurate. Many people who have the same issue as you're having, end up replacing the oil pressure sending unit, which fixes the issue.

But again, don't put any faith in that gauge, it's very well known for being inaccurate.
