What kind of damage will happen to a Wrangler if its running with the O2 sensors disconnected?

Don't do that, their absence will cause the computer to set the fuel mixture ratio incorrectly and cause reduced power and you'll get substantially worse mpg. Figure out which one(s) are bad and replace them with NTK or NGK (only!) brand O2 sensors. Don't use Bosch!!
Depending on the year... Some have O2 sensors for fuel, mixure others have have some further down to monitor the cats.
Either way, all are benefitial since the post cat ones can alert you to a clogged cat.
That said, there isn't any long term engine harm leaving them unplugged since the fuel will be run more conservatively to make up for the unknown. But you are leaving performance on the table by doing so.

Thanks for the responses. While I am not physically removing my O2's, when viewing the data through a BT ODB2 reader my O2's are being turned off by what I believe is the PCM (the voltage on both the sensors go to zero). This causes my Jeep to lose a significant amount of power and not go past 3800 RPM. It happens when it's rainy or foggy outside and lasts for a few days after.
