Can the transmission cooler quick connect fittings at the radiator be changed to AN fittings (something like an ORB to -6 fitting) or am I better off just using adaptor

Yes, any of them can be changed or adapted. If it is the 05-06, we already have those in stainless. If it is the middle genre with the odd little o-ring style, then I typically have to silver braze -6 male flare onto them for the conversion. The early version is just inverted flare with a tube nut or one piece so those are already out there.

Is your adapter for the '06 the one you put in the Setrab transmission cooler install kit? If so I have one in that kit and just need to get a second one

To help with future ID, the below are the 3 styles of OEM trans cooler fittings.
Inverted flare for early
Oddball inverted o-ring flare for the middle years, I've converted 2 of them to have -6 AN Male flare.
