Had valve cover gasket done. Since then, smelled coolant. Looked for leak and didn’t see anything major, but it seems coolant is weeping out of radiator cap or the breather hose. Any advice would be appreciated.

Make sure the radiator cap is screwed all the way down and that its gasket is good and not leaking. If you replace it make sure it's an OEM style with the proper 18 psi pressure rating.
If it's leaking out from under the radiator cap it's more likely from an overheated engine or a bad or loose radiator cap.

No. The radiator should be completely full with no air pocket, and the overflow reservoir should be filled to somewhere between the HOT and COLD markings.
Even if the engine overheats, the coolant should vent through the small diameter hose and into the overflow reservoir. That is how a closed system works. If coolant is coming out around the cap, there is an issue. Remove the cap when the engine is cold and ensure there is no debris on the sealing surfaces and the cap gaskets are intact.
Is the 210 from the gauge or an aftermarket digital gauge? The dash gauge is somewhat of dummy gauge and shows ranges based on the computer. As @Jerry Bransford stated checks the radiator cap is on correctly or isn’t bad. If it is replace with correct cap.
210 is reading from dash gauge. I just purchased a new cap. Plan to put on and see what happens. Appreciate all the info.
When I replaced my valve cover gasket I had to remove the upper rad hose clamp at the thermostat housing in order to manipulate the valve cover off. Check that the hose and the clamp are on the thermostat housing correctly.
