Hemi 5.7 or Vortec 6.0?

The Hemi engine is probably the more “cool” option, but there is a lot more options in terms of swap parts and tuning options for the Chevy engines.

Pretty broad question. Really depends on a lot of questions that you can only answer such as:
What are you using the Jeep for?
Auto or manual?

I think the 5.7L might be an easier swap, but I lean towards the 6.0 .

Yeah, I think that’s why i was so set on the HEMI, I’ve also read that the HEMI generates most of its power in higher RPMs. So the Vortec has a better power band. I’m no mechanic but the Vortec sounds better in that aspect.

Definitely manual

I think the 6.0 only came with a NV4500 behind it from the factory. Putting that transmission in might be more work than you are looking for. I'm also pretty sure you can hook up a 5.7 to an NV3550 with little problems. For manual, the 6.0L can be done, but I think the 5.7 might be easier.
