Looking for instructions on changing brake rotors and pads

The park brake locks the front pads do you lift it at the front and chock the back?

You are confused about how the brake works. Look in a service manual

What do you do about the park brake? Leave it off and Do just chock the back wheels?

Do one at a time.
No need to chock anything, unless you're working on a hill.
Parking brake only locks the rear and could prevent the removal of the drum or rear disk.
