The wiper is tricky because the same switch controls the wiper, and then also the wiper + the washer function. So you need a latching switch combined with a momentary switch to make it work as designed. There's a trick with the ground, too, that parks the wiper after you turn it off.
The defrost is also tricky. It uses a timed relay in the instrument cluster to turn on the defroster (pressing it again turns it off), and then a secondary circuit to light up the switch. It is also a momentary switch, since you just need to briefly ground the circuit to start/stop the defroster function.
