I recently had my head gasket and heater core replaced. Since then, I've noticed a sweet smell. It comes and goes. No loss of coolant. Could it be coming from the exhaust or heater core? Leftover coolant in the vent system? Also noticed some windshield fog after the replacements even though it's not at foggy now. Also the heater doesn't blow as hot as the old one.

Id say lingering coolant in the ducting/vent is causing the smell. Thats been my experiance but do keep tabs on the coolant level.

Bad news: sounds like heater core may be leaking, or at very least it’s residual coolant in the vents and you have a not great brand of heater core (due to sub par heating you noted). What brand did you swap in?

Good news: it smells sweet…
