Temp gauge inaccuracies

What does the gauge read? Did you replace the thermostat with a 195 degree one when you did the radiator?
X2, are you certain you installed the correct thermostat which is a non-failsafe with a 195 degree rating? Failsafe thermostats commonly fail in the open position causing the engine to run too cool in temperate or colder conditions, so will a 165 or 180 degree thermostat.
 
If your code reader does live data, it will show you the exact temp. Once warm, you should run around 210. My 97 sits right at 212F, my 02 runs a steady 202F. You should be in that ballpark, but don't rely on the qualitative measurements on the gauge, get real data.
