This "sensor" sits in the battery tray beneath the battery but I have no idea what's it's function or how to properly test it. Any ideas ?

It's a temperature sender that tells the PCM when the battery's getting hot while getting charged so the PCM can lower the charge rate. It's likely working fine if the wiring isn't chewed up.

Thanks for that but is there a way to test it and verify is good?
 
The battery temperature sensor is covered in the Charging Section (in 8F) of the Factory Service Manual. You can find that manual in the resources forum here. Unfortunately, there's nothing in there on how to test it. It does mention that it's powered by a 5V signal from the PCM.

Put an ohmmeter on it and see if its resistance changes in step with temperature. I don't know what its normal resistances would be though. Edit it should be 9,000 to 11,000 Ohms at room temperature per the FSM.

I'm glad you asked that, because I just learned something new. Here's a direct link for the 97 FSM. Download that, and then search for "Battery Temperature Sensor" and you'll find it mentioned many times in several sections of the manual, but the description of how it works is in the Charging Section on page 8C-2 (page 268 of the pdf). But here's the part I learned - the 1997 manual lists a test procedure (my 2005 manual does not). It's on page 8C-5 (page 271 of the pdf):
