Did you do a write up on this anywhere? I haven't really looked into it yet but might be interested in something like that down the road.

I haven't, but I did take a handful of pictures along the way. I can throw something together.

In addition to all the other good suggestions, bring a blanket. Keeps ‘em warm or can be a pillow. I have a small duffel with a couple of little blankets, some Wipe-all rags and a roll of RV tp. It makes for a good pillow or sibling divider.
And maybe the Red Ryder (or a .22) depending on where you go.

Something that is obvious but I'll say is toilet paper and zip lock bags.
I carried the zip lock bags for used toilet paper and wipes. Don't enjoy seeing used toilet paper left on the trail.
