Haven't smoked in a few weeks since it's been so damn hot outside. Well, yesterday was "only" 98 degrees, so I fired up the smoker to make some Pork Belly Burnt Ends.
This is the first time I tried these, so this was a learning experience.
Cut up a 5lb pork belly into 1.5" cubes and slathered in olive oil and a generous dusting of Meat Church Honey Hog Hot Rub.
Smoked at 250 till they hit 205, then put them in a foil pan and added BBQ sauce, brown sugar, butter and honey and smoked for 30 more minutes.
When they were done, they melted in your mouth. Tasted like meat candy. My family loved them, I thought they were good, but a little rich for me. After 4 pieces I was done.
Personally, I think they would make great appetizers for a party or get together, but a little to heavy to have as a meal.
Definitely a fun cook though.
