I see it written dozens of times a day and it's always y'all, so I don't know where you got that spelling.

• We + Will = We'll
• They + Are = They're

So, y'all is the correct contraction for "you + all," right? Of course, it is, y'all."

• They + (A)re = They're
• I + (Ha)ve = I've

And they conclude y(ou) + all = y'all??? It doesn't follow the pattern.

By your logic though, it would be "you'll", which isn't what people say and already means something else.
