Should my oil pressure gauge fluctuate when accelerating I recently changed my oil and now every time I accelerate I can see my oil pressure gauge climbing I have never noticed this before

Yes.
It will rise with RPM.
It will be higher when the oil is cold and lower when it is hot as well.
