Hearing some high pitched chirping noise coming from front center. I’ve done a little digging and think the ujoints might possibly be going bad. What is the best way to know if it is the DS/ujoints? If I pull the DS off, am I able to drive? Any and all input is appreciated.

You can pull the whole shaft, or just disconnect the front pinion end and tie it up.
If it is the driveshaft, it's probably the centering ball of the DC joint.

If I were to pull the whole driveshaft tomorrow, would I be able to drive it like that until Saturday when I could get new ujoints in?

As long as you want/need to.

As long as you don't have a slip yoke in the rear of the tcase, you can also pull the rear driveshaft and drive it on the front driveshaft only.
