Removing door surrounds

I was going to remove my door surrounds so I could install my bikini top but when I was unscrewing one of the bolts that goes through the roll bar the part you grab to unscrew it was stripped. I tried to unscrew it but the handle just kept spinning and didn’t unscrew. I popped off the top of the bolt to see if there was any way to unscrew it but I just saw a plain, round top with nothing to grab to turn it. I don’t want to force anything so I was wondering if anyone had a tip or method I could use to unscrew this and be able to remove my door surround.

Grinder to cut a slot in it and use a screwdriver.

Yea I would try vice grips. Tighten the vice grips really hard.
