Ripped the whole dash, door panels, Center console out, stripped them and repainted them with a plastic paint, for a refreshed interior on this old gal... Not bad looking for 300,000 miles on her!

Not at all. Was ultimately a very cheap refresh. I used Dupli-Color Spray Grease/Wax solvent to strip down and clean each piece thoroughly, Followed by Krylon Fusion Spray Paint. I could have gotten different paint and used a pneumatic sprayer, but the cans of paint were cheap enough.
For the Arm rest, I used a matching color Vinyl paint, because that has a lot more flex/give than the Fusion and I was worried that would flake.
The biggest pain in the neck on the project was getting the Passenger side airbag cover off. It has tiny bolts that are up underneath it, and you have to bend it back (Without breaking it) and remove the nuts from the under side... Also mine is a manual, so when I took the center console off the lower boot around the gear shit (Not the decorative external one that you normally see) just completely disintegrated and had to be replaced.
I would also highly recommend you create a "Clean" area for painting. If you have not painted auto parts or anything really with spray paint, dust is NOT your friend. I hung some cheap plastic sheeting from lowes for $3 a roll to create basically a "Clean" room and then just setup a couple of poles to hang parts from to paint them.... Multiple light coats with a good drying time in between, works MUCH better than a few heavy coats.
Good luck - whole thing for me cost about $150 including the boot... Not counting the replacement airbags, clock springs, stereo, etc, etc. etc. that I did at the same time.

I did the same to my 2000 TJ and it was really easy and I enjoyed doing it. I used rustolium X2 paint after is sand it and primed all the parts. Fun project and happy with results. I did not remove the passengers side air bag. I masked it off and painted it in place.

I did it last winter and it still looks like it did the day I painted it. And I had the top down most of the summer in the sun.
