Are you 100% positive that your thermostat is opened all the way? There is a bypass that allows some coolant flow even if the thermostat isn't fully opened. although its seems to me that you would have overheating issues if that was the case.

Your ambient temp is super low where you live from what I can tell. That might allow the jeep to stay at operating temp with a bad thermostat. Just a thought. This thread/issue has me a bit confused as well.
