When not to bother outboarding?

We say 12s in back because that is the longest length that fits most reasonably most of the time (not enough people notice that Rubicons are troublesome). Same reason 11s are recommended for the front.

DSCs on a smooth body Fox 2.0 is largely a parts bin creation. The only remaining piece of your original shock will be the body tube. Rather than convert, it might be wiser to sell your existing shocks and build the DSCs from scratch.
Why did you say " not enough people notice that Rubicons are troublesome"

The short rear driveshaft. With a 4" spring lift and a good raised belly, the rear driveshaft will often start to bind somewhere around 5" of droop. Mine was fully locked up at 6", so I put a center limit strap on it.

I know of several other examples. And I strongly believe it is common but few people check.

Mine exhibits the same lockup. I had no idea till Blaine asked me to check and see for myself. I would not have known otherwise and I'm glad to have learned about it and it's implications.

Is that because of the different TC than a non-Rubicon ?

In addition to what jjvw said above, getting a DC rear driveshaft at the typical lift heights we put on also adds to the effect further.
Along with the 241's inability to use a SSSYE like the 231 can.

Ultimately, I guess it will probably come down to finding a shop I trust to do the work. My local custom shop would do it, but has no experience. The shop that is doing my regear might have very limited experience. Sadly, I expect there is much truth in virtually no shops have much experience in doing this (and in Texas, I suspect most shops focus on mall crawling JKU and JLU's anyways). The experience lies in the forum and Mr Blaine.

Irregardless, I doubt I will be ready to do much in terms of outboarding till fall or later. I have a lot of irons in the fire on this build-and if 3/4 of them come together this year I will be doing very well. Punting with 5000X might be worth it till I am actually ready for tuned shocks.
