Here are some pics from a pay & play I went to in October. Didn't get many of the action but there was a lot of deep mud and rutted climbs.

My TJ did surprisingly well on 32s and no lockers. Only had to winch once cause I got wedged in a ditch, but didn't go for any crazy mud pits because I knew it would be pointless and only break stuff.

The level of challenge really depends on what you tackle as it's basically a free-for-all. Pay attention to what other vehicles are doing and what kind of mods they have to get an impression of difficulty.

Looks like a lot of fun and the point about only tackling as much as you want to is well made. Are you running any sort of suspension lift at the moment or are your 32s on the stock suspension?
 
That 4" spring lift will likely also require a SYE and new drive(prop)shaft.
How many guys do you know running Jeeps over there? Not those British knockoffs,😁 real Jeeps? Try and find a decent Jeep club and see what they are running. Most would welcome you to a ride along. That could help you decide what you want to end up with. Going in stages is a good plan because you may find happiness before you get to stage 4 of your build plans. Don't forget you'll need shocks for any of the spring lifts you choose.

It was just a 1" spacer in the rear and ZJ springs in the front to get me started, but I've since installed a proper 2.5" lift with Ironman shocks.

That's great, thanks. Is that 2.5" lift the Old Man Emu kit? How are you finding it? What are you finding are the best sources for parts here in the UK? DId you import anything from the US and if so how did that work out? Are you doing the work installing parts yourself and if not who are you using?

Yes, even my 'stage 1' for the 4" lift assumed I would need the SYE and new drive (prop) shaft.

Jeeps are pretty thin on the ground here, we know a couple of people locally with modern ones but they are purely onroad use. Wranglers tend to be LKs and LJs, I don't know anyone else around here with a TJ and to be honest can't remember the last time I saw another one. As you allude to, there are a lot more Land Rovers* over here.

I am looking to join the UK Jeep Owners Club as (in normal times) they organise events, but looking at what I can find online that seems to be mainly frequented by much more recent models. I have also found a local offroading club, but my guess is that the majority there will be using Land Rovers.

* Land Rovers is, as I suspect you know, no longer British, it is Indian owned now. But then of course the ownership of Jeep is a long way from the US now and even less so in the near future when I think it will officially have a Dutch parent, nearly a third controlled by an Italian family, a French family and the French Govt. Funny old world we live in.

It pays to search around a lot to get the best prices. I do all the work myself.

I have a mix of stuff and pretty happy with this set up so far;
2.5" spacer in the rear, 3" XJ coils in the front I managed to get for about £90
Old man emu rear track bar drop bracket - £30
Modified my front track bar to make it adjustable - parts were about £60
I wanted good shocks so went for Ironman Foam Cell, these were from an eBay seller in Poland and set me back about £380.

There is a good off road scene in Poland so quite a few suppliers of the Aussie suspension brands like OME, Ironman, Dobinsons and EFS in addition to cheaper non brand stuff. The exchange rate is good and shipping is cheap so worth a look on their equivalent of ebay which is Allegro.pl

If you do import from the US make sure you use a service that charges import duties up front. Ebay and amazon both have this for certain sellers.
