completely agree, I'm a huge proponent of a whole food diet which by definition eliminates all that added bs, & commercial bread is not a whole food for sure. I've found eating processed foods to be hard to completely cut out, even some of the best things are at least minimally processed, for example one of my go-to breakfasts is organic sprouted rolled oats, & once that oat is rolled, or cut, it's 'processed'. Same for anything utilizing even the best flour... my bread is a mixture of organic whole wheat & bread flours, and water, processed for sure but it weeds out all the garbage found in the store bought bread.
yea, all the best food in the world can't solve the problem of portion control, that part is always up to us.
One way I avoid that is slicing & freezing the individual pieces as soon as it cools, out of sight out of mind... I then yank out a piece every day. I however ALWAYS lop off the end first & wolf it down with butter, man there is nothing better than the freshest bread
