I’m in the process of installing my Old Man Emu ultimate lift. I noticed the rear Bump stops have deteriorated. Do I just order the OEM Bump stops or is there a better aftermarket option?

I would stick with the OEM style unless there was a reason to convert to a different style (i.e., without the bumpstop cup) altogether. I've since replaced mine with the Currie kit, but if I were installing one that used the cup, I would use the factory style foam ones.
There are taller ones made from rigid rubber or polyurethane, but they wouldn't work as effectively as the foam ones.

There are a few members testing the metal cloak ones - but oem is always a good choice until it needs changing.

An aftermarket option is Sumo Springs . I've been looking at them recently and I think they're basically a larger jounce bumper that functions similarly to the teraflex speedbumps and sort of mimic air bumpstops. It's a compressible foam that squishes progressively to soften impacts when you bottom out. At about $110 for the rear end it's way cheaper than air bumps, but I wonder about the end result. I'm an inch from ordering a pair, but I'd rather if you did it first and report back.
