When the air temp is high for long periods, the dirt in the pots heats up and the roots get hot. Keeping the pots in shade will help, but if you have 115+ temps like we do, then even shade isn’t enough.

Pots are hard to grow in. Bigger is better. My tomatoes in pots aren't doing as well. I'll move the pot tomatoes to the pots that take 2 people to move. When I moved my pot tomatoes to the porch, they had grown roots in the ground.

Pots also either dry out or retain too much water. It's harder to control moisture and root temps.

Our garden is still out of control too! My wife is tired of all the tomatoes on the counter and trying to find new uses for them

I've made 3 batches of sauce so far. First year doing sauce and definitely won't be the last after tasting it!

I stick tomatoes in a vacuum bag and freeze them.

I don't think the bag is reqired short term.

Are you giving the recipe for the French Tian ? I'm ready to copy..ha ha

It's simple. Olive oil a pan, layer a can of tomato paste, and crushed tomatoes,

Add garlic, oregano, herbs de provence, salt, pepper.

Cut onion, pepper, tomato, eggplant, zuchini.

Layer those upright on the tomato paste. Bake at 350F for an hour.
