I replaced my whole cooling system a while back, all mopar parts, and it never reaches 210, only on a hot day, (85+) She doesnt take long to warm up so I know the thermostat isnt stuck or anything, it just feels weird seeing it run so low after driving for 45+ minutes. It usually runs a little left of how it is in the photo

If it passes emissions, In my experience there is a small power advantage in cooler water temperature with stock settings. Above 204 degrees the mapping reduces power. At around 215 it gets a little more aggressive in reducing power.

The bean counters decided that knock sensors are too expensive. The PCM is capable of supporting a knock sensor so the savings is a couple of wires and sensors. That savings caused the powertrain engineers to go ultra conservative with calibration.

For people altering factory settings to tune for performance, cooler combustion chambers allow more cylinder pressure with out knock. I never run less than 180 degree t-stat to keep wear down.

Our PCM's are capable of reading a knock sensor? I know they aren't wired for it, but curious for more info.
 
Can you get a true reading with a scanner. Not sure how accurate the dash is.

If you look at the pinout on the JTECH, there are pins for knock sensors. I don't know if current tuning software supports it. The 4.7L V8 HO in the Grand Cherokee uses the same JTEC controller. It's on my radar, but not high on my list.

Someone installed the wrong temperature or it's a "failsafe" thermostat that is now stuck open. Replace it with the correct 195 degree non-failsafe thermostat. Like a Stant.

That temp and your described behavior looks at first glance normal to me btw. Grab and ELM123 scanner and check exactly what is going on with your phone. $20.
 
I’m running a little hot, so I get your idea trying to find the right temp. I HIGHLY recommend a wireless code reader (I went VeePeak) and a app like OBD2 Fusion that allows you to read the actual temp the PCM is getting.

I would also run your gauges through a check (I believe it’s cycle the ignition on while holding the mileage button) and see what it thinks “middle” to be. These gauges only have low med high and didn’t actually very much with numerical value.
 
I'd get a cheap reader so you can see the actual temperature. If it is a bit low, I'd replace the thermostat with a quality 195 unit. With the gauge sitting that low, it is likely you are running a bit cold, but it can't hurt to check with a reader first.

I dunno how you can believe his temperature indication and the OP saying that it never reaches 210 except on a hot day is normal. That it reaches 210 on a hot day tells me his temperature indicator is ok.

Basically the fuel trim (during warm) is adjusted by the computer based on engine temps and normally runs a rich mixture until the temps reach proper levels. So feasible if the engine is running at low temps fuel mileage can be off and dump rich exhaust that can also play havoc with the exhaust Cats.

I would not put any t-stat below 180 in anything. Mine runs around 190 with a 180 t-stat and there there is no enrichment. At around 160 there is quite a bit of enrichment. Once in closed loop it will not vary A/F much if any. Narrow band O2s don't have enough range to allow it.

Maybe higher emissions? I've passed tailpipe emissions tests with 2 different cars with 180 t-stats so ¯\_(ツ)_/¯

A check engine light if it is too cold for too long.

I have not had any issues in 2 years even in winter, but Tennessee winter is more like Colorado fall.
