What is the proper backspacing for a 285/75r16 tire on a 2005 Rubicon? I am running the factory Moab wheels but I'm not sure with these size tires if it would be wise to go to a different 16" wheel with better backspacing?
Space the wheels out from the hub using hub centric spacers. You can always get wheels with better backspacing but that is more of a subjective preference. I prefer the Moab’s so I spaced mine out slightly with 1inch spacers.
Common issue with Moab’s is that when the tire size increases above the factory 245/75/16s the larger tires start to rub on the lower control arms.

Those are metric 33x11.25s. The stock Moab wheels should be 8" wide with 5" backpace. The 1" spacer @Tronner mentioned should put you at a perfect 4" BS.

The Moab wheels are fine. I have run them like this for about 20 years. Adjust the steering stops if you're rubbing the arms.
I am currently running some spidertrax 1.25" spacers, but more to line up the trackwidth with the grooves left in the highway by wider trucks with chains on I-70
