I usually cube them first, smoke and then finish off in a pan in the smoker with butter and what ever final flavor profile you want.Did you smoke a whole pork belly and then slice all the edges off for the burnt ends?

That sounds good. You just reminded me that I’m going to marinade pork chops tonight for lunch tomorrow, going to marinade them in Devils Spit pickle juice. Never tried it but it sounds good to me.Santa Maria marinade, I’ll post a similar recipe.
