Not as plentiful up here because most every place you find them the fish will eat them.

I suspect it’s the same in Loiusiana, but there are so many crawfish the fish can’t reduce their numbers, which is a good thing for those who like crawfish boils.

It may surprise you to learn that a. The American Signal Crayfish (not sure exactly which of your options that is) is invasive in the UK and b. One can get a licence to trap and eat them. Not that I would eat anything from the Thames without purging it thoroughly in fresh water for a week or two!
