Update:
Finished my ceiling painting, hard to get perfect shots because the color dramatically shifts depending on the light. Let's just say it's very "moody" with lots of cracks in the plaster, exactly what I was going for.
There will be a full length soffit running 28' lengthwise on each side hiding soft lighting reflecting up on the ceiling and down on the wall when completed. The center part between the painted side panels on top will be aged wood running the length of the room too. Cross beams will then wrap from one side to the next resting on "special" carved wood corbels I have coming, each corbel will be a different game animal, but I've included one to show you how they look before being stained and varnished.
The process was basically skip troweling and four different shades of paint in many layers, I'll apply a coat of satin varnish next to the ceiling next.
As you can see, the ceiling actually glows where the light hits it, very soothing.
