Finally got my new tires mounted! It was a fun experience and totally worth saving 160$.
I used a hi-lift and jack extension to break the beads after deflating them with my trailer deflators.

They were a good recommendation and worth the money, I think this would have been terrible with the 18" motorcycle ones you see people using on youtube.

Some points that helped me:
Pay attention to the skinny part of the wheel and try to keep the bead there
Keep it lubed up lube lube lube
Most progress is made by stomping the tire while stretching the bead
I used a 2x4 to keep the bead in the skinny section when setting the first bead
I put the wheel on blocks (tire floating/hanging) when setting the second bead so gravity helped keep the bead in place

I think I'm going to grind them off for next time. All they really did was pull the bead out when I was trying to pull the spoon out to reset it.
I just set the beads by filling the tires up with my compressor.

Not pictured but it helped to lean the wheel against blocks, leaving the tire hanging so there was enough pressure on the bead to fill the tire. Lots of lube too. I had to finagle with one tire with the spoons and try a second time to set the bead but it went smoothly overall.
